Caturday and Kale Soup

I decided to ditch the pics of the cats and just go with my own artist’s impression. Otherwise your eye just wants to compare. Hope you don’t mind.

This kitty is Max who likes salmon treats, blankets on laps, and chirping at birds. Thanks for your submission! I may be open to dogs too, so feel free to send in a pic of one. I am also open to selling the work, more details on that in the future.

Now as promised, that soup I threw together earlier this week.

White Bean and Kale Soup for Two

A quick throw-together soup that’s ready in less than 15 minutes! Serves two, so double as needed.

This soup is partially inspired by a soup JL( from JLgoesvegan) made for us at vegfest because it also had kale and miso in it.

Gather together:

  • 1 can white beans
  • 2-3 stalks kale
  • 2 stalks celery
  • 1/2 medium onion
  • 3 cups water or veg broth (I personally avoid broths due to sugar content unless homemade)
  • salt
  • 1 1/2 tablespoons miso paste, use GF versions
  • olive oil

To make: Sautee the onion with olive oil in a pot. Add in the celery and sautee until they both have browned and softened. Add 3 cups water/broth, and bring to a boil. Reduce and add kale, and let soften just a minute or two. Remove from heat and let cool slightly. Add the miso paste and stir to help dissolve. Add salt only if needed (miso is salty). Serve and enjoy!
